In the summer of 1998, Jay Schimmel moved back to his hometown with a two-year-old daughter and the dream of a restaurant appropriately outlined on a dinner napkin. Schimmel, a fifth-generation Mississippian and former All-American football player for the University of Mississippi, graduated first in his class at the California Culinary School and earned his chops in two of the West Coast`s most respected restaurant companies, Kimco and Real Restaurants. Now his namesake restaurant in the heart of Mississippi`s capital city has established itself as one of Mississippi`s finest dining experiences, not to mention become a favorite watering hole for legislators, business people, and hipsters. “We certainly have had our share of celebrities,” Schimmel says, “from recording artists R.E.M. and Lance Bass to Vice President Cheney and the King of Spain. But even better is the eclectic mix of patrons enjoying each other under one roof.” Valet parking, comfortably elegant surroundings, attentive staff, sumptuous fare, and expertly crafted cocktails have set Schimmel`s apart. From the moment patrons push through the revolving front door, they know they are in for an unparalleled experience.

Jay`s vision of the perfect restaurant extends far beyond the menu. He chose to build his dream in an historic area of his hometown, a decision that helped boost the renaissance of the area into one of the state capital`s most desirable destinations. Situated on the crest of one of Jackson`s highest elevations, the restaurant`s appealing exterior only hints at the atmosphere within. Local architects and designers worked together to give the bar and restaurant a big-city feel paired with Mississippi`s two greatest natural resources-warmth and hospitality. The bar is intimate, as are curtained dining booths and private banquet rooms. The dining room itself is lively yet sophisticated. A highly trained and dedicated waitstaff provides diners with professional service and personal attention. A generous upstairs banquet area lends itself to private parties and corporate events.
