In the summer of 1998, Jay Schimmel moved back to his hometown with a two-year-old daughter and the dream of a restaurant appropriately outlined on a dinner napkin. Schimmel, a fifth-generation Mississippian and former All-American football player for the University of Mississippi, graduated first in his class at the California Culinary School and earned his chops in two of the West Coast`s most respected restaurant companies, Kimco and Real Restaurants. Now his namesake restaurant in the heart of Mississippi`s capital city has established itself as one of Mississippi`s finest dining experiences, not to mention become a favorite watering hole for legislators, business people, and hipsters. “We certainly have had our share of celebrities,” Schimmel says, “from recording artists R.E.M. and Lance Bass to Vice President Cheney and the King of Spain. But even better is the eclectic mix of patrons enjoying each other under one roof.” Valet parking, comfortably elegant surroundings, attentive staff, sumptuous fare, and expertly crafted cocktails have set Schimmel`s apart.
