Cookin’ for Mom

Mother’s Day Fritata

Being so far away from my mom really brings out the sentimentality of this holiday for me. What better way to celebrate our mothers than to plan a whole day full of the things they love? If my mom were in town, I would definitely plan a delicious breakfast, walk in the park, yoga class and evening concert for us. I considered mailing her food to California, but immediately thought better of it. Instead, I’ll give you the recipe I would use for my mom, and hopefully the women in your life will enjoy it on her behalf.

8 eggs
1/4 cup whipping cream
1/2 cup crumbled feta cheese (about 6 ounces)
4 green onions, thinly sliced
1/2 cup fresh basil, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons freshly grated Parmesan cheese
1 tomato, chopped


Preheat oven to 350 degrees. Whisk eggs and cream in large bowl. Stir in the remaining ingredients. Pour into greased 9-inch round baking dish. Cook for 35-45 minutes, until center is set and no longer wet. Serve with fresh fruit, biscuits and coffee.


Motherhood Around the World

It’s good to be a mom—in Sweden, that is. The progressive Nordic country is about as good as it gets in terms of health care and education when it comes to motherhood. Unfortunately, most women and children around the world don’t enjoy such luxuries; on average 1 in 21 mothers in the lower ranks of the world index will die as a result of pregnancy-related complications, and more than one child in every six will die before their first birthday due to malnutrition and a lack of essential medical care.

And the U.S.? The leaders of the free world slide down one notch from last year’s Save the Children report, “A Mother’s Day Report Card,” ranking No. 27. Looks like we could use some study time with folks in Scandinavia.
